What you need!
115g of softened unsalted butter
50g unrefined granulated sugar
70g light muscovado sugar
1/2 tsp natural vanilla extract
1 large free range egg, lightly beaten
160g plain flour
1/4 tsp bicarbonate of soda
100g Dark organic chocolate, cut into chunks
What you need to do!
Preheat your oven to 180°C or gas mark 4 and lightly grease two non-stick baking sheets.
Using an electric hand-whisk cream the butter and sugars together in a large bowl until pale and fluffy, gradually beat in the egg and the vanilla extract. Sift in the flour and bicarbonate of soda, and then add a pinch of salt along with the chocolate chunks, using a wooden spoon mix well to a softish dough.
Spoon the dough onto the baking sheets, space well apart (you should have around 15 cookies). Bake for around 8-10 minutes remove from the oven and leave on the baking sheets for a couple of minutes before transfering to a wire rack to cool.
